Marinated Carrots - cooking recipe
Ingredients

2 bunches carrots, sliced
1 large onion, chopped
1 large bell pepper, chopped
1/2 c. cooking oil
1/2 c. vinegar
1 c. tomato juice
1 c. sugar
1 Tbsp. dry mustard
salt and pepper to taste
Preparation

Cook carrots slightly.
When cooled, cover with other ingredients.
Let stand overnight.
Will keep 2 or 3 weeks or longer in refrigerator.
