Easy Peach-Cheese Pie - cooking recipe

3/4 c. all-purpose flour
6 Tbsp. firmly packed brown sugar
1/3 c. margarine
2 tsp. grated orange rind
2 to 3 Tbsp. cold water
1 (8 oz.) pkg. cream cheese
1/2 c. powdered sugar
1 tsp. vanilla
1 (9 oz.) container whipped topping, divided
1 (16 oz.) can peaches, drained, or 2 c. fresh sliced peaches
Preparation

Blend together flour and brown sugar.
Cut margarine and orange rind into flour mixture.
Stir in enough cold water to form mixture into a ball.
Pat dough into a 9-inch glass pie plate. Microwave at Medium 3 to 4 minutes.
Crust will puff up and will settle down.
Cool before filling.
