Tater Topped Fish - cooking recipe

Ingredients
    1 pkg. Frozen broccoli, carrots, cauliflower vegetable blend
    1 lb. Orange roughy fillets (about 4)
    1 Can condensed cream of celery soup
    1 pkg. (8 oz.) shredded Sharp cheese, divided
    1/4 Cup Milk
    1/8 tsp. Ground black pepper
    3 Cup Frozen tater tots
    Fresh parsley, snipped
Preparation
    Preheat oven to 425 degrees. Place veggies in large microwave safe cooker, microwave on to package directions. Drain and pat dry with paper towel. Place veggies in bottom of baking pan, top with fish, in large bowl, combine soup, 1 c. of the cheese, milk, black pepper and mix well. Spoon over fish and spread. Top with taters and bake for 20 minutes. Sprinkle with rest of cheese. Bake for another 5 minutes until cheese is melted. Sprinkle with parsley.
