Peach-Glazed Cornish Hen With Ginger - cooking recipe
Ingredients

2 (1 1/2 to 2 lb.) Cornish hens, split
1/2 tsp. salt
1 c. chopped dried peaches
1/4 c. fresh orange juice
1 green onion, thinly sliced
2 Tbsp. fresh grated ginger
2 Tbsp. brown sugar
2 Tbsp. fresh lime juice
1 Tbsp. soy sauce
1 Tbsp. vegetable oil
Preparation

Place hens skin side up in a 13 x 9 x 2-inch baking dish. Sprinkle with salt and broil 6 inches from heat, 3 to 5 minutes or until skin is lightly browned.
Combine peaches and remaining ingredients in small saucepan.
Cook over medium heat for 5 minutes, stirring occasionally.
Pour sauce over hens.
Bake, uncovered, at 375\u00b0 for 30 minutes or until done.
