Tabooley(Tabouli) - cooking recipe

Ingredients
    1 c. medium fine bulghur wheat
    1/2 c. olive oil
    juice of 4 lemons (3/4 c.)
    1 bunch scallions (including green part)
    2 large bunches parsley
    4 large tomatoes
    1 small bunch celery
    2 small cucumbers
    vegetable salt to taste
Preparation
    Finely chop the scallions, parsley, tomatoes, celery and cucumbers.
    In a large crock, place layer of wheat. Add olive oil and lemon juice.
    Layer the veggies in order listed, scallions first, cucumbers last.
    Sprinkle vegetable salt on top.
    Cover crock loosely and store in refrigerator until ready, 24 hours to 2 weeks. Toss well to mix. Check seasoning.
    Serves 6 to 8.
