Tabbouleh (Cracked Wheat Salad) - cooking recipe
Ingredients

1 c. fine bulgar
4 c. parsley, chopped fine
1 c. scallions, chopped fine
2 large, ripe tomatoes, cubed
1/2 c. lemon juice
3/4 c. corn oil
salt and pepper to taste
dash of red pepper, optional
Preparation

Place bulgar in a large bowl, cover with cold water, let soak for 10 minutes.
Drain, add all ingredients.
Mix until well blended.
Serve on lettuce.
Can be used as an appetizer, salad or meal.
