Fried Rice - cooking recipe

Ingredients
    4 c. cold cooked rice
    2 eggs, slightly beaten
    1/2 c. chopped scallions, cut in 1/4-inch pieces
    4 Tbsp. oil
    1/2 tsp. salt
    3 Tbsp. soy sauce (dark)
    1 Tbsp. sugar
    1/2 c. frozen or blanched fresh peas
Preparation
    Heat small pan; add 1 tablespoon oil and dry scramble the eggs.
    Remove and set aside.
    Heat wok; add 3 tablespoons oil and 1/2 teaspoon salt.
    Add scallions; mix few times.
    Add rice and mix in thoroughly.
    Add sugar; mix.
    Add soy; mix.
    Add eggs, cut into small strips or pieces.
    Add peas.
    Heat through.
