Louisiana Dirty Rice Casserole - cooking recipe

Ingredients
    1 1/2 lb. ground chuck or 1 lb. chuck and 1/2 lb. sausage
    1 large onion, chopped
    1 bell pepper, chopped
    1 rib celery, chopped
    1 small jar diced pimento
    1 can cream of chicken soup
    1 can cream of mushroom soup
    1 c. long grain rice
    Cajun seasoning to taste
Preparation
    Season beef and put into a 3-quart microwave casserole dish with cover.
    Add next three ingredients and cover.
    Microwave on High (700 watts) for 5 minutes.
    Remove from oven and stir to crumble beef.
    Stir in pimento and cans of soup.
    Add rice and seasoning to taste.
    Mix well.
    Microwave on High 5 minutes, then on Medium-low (350 watts) for an additional 20 minutes.
    Remove from oven and stir.
    Microwave on Medium-low about 10 minutes longer or until liquid is absorbed and rice is done.
    Remove and let sit 5 minutes.
    Serves 4 to 6.
