Christmas Cake - cooking recipe
Ingredients

8 eggs
2 c. sugar
3 Tbsp. vanilla
1 Tbsp. almond flavoring
3 c. all-purpose flour
3 tsp. baking powder
2 tsp. salt
8 c. pecans, quartered
1 lb. candied cherries
1 lb. candied pineapple
2 lb. dates, pits removed
Preparation

Beat eggs
well.
Add
sugar and continue beating until well mixed.
Add
vanilla
and almond flavoring. Sift together flour, baking
powder
and
salt.\tSet aside.
Combine pecans, cherries, pineapple
and
dates.
Sift flour mixture over this and mix well, then add eggs and sugar mixture.
Mix thoroughly.\tPour into greased and floured cake pans.
Bake over a pan of water for 1 1/2
hours\tin
a 250\u00b0 oven.
Serve when cool. Like a fruit cake, portions should be kept small.
