Sweet And Sour Red Cabbage(Serves 4) - cooking recipe

Ingredients
    1 small red cabbage (1 lb.), shredded
    1 small onion, chopped
    boiling water
    1 small apple, unpeeled, cored and shredded
    1 small potato, peeled and shredded
    1/4 c. packed brown sugar
    3 Tbsp. red wine vinegar
    grated peel of 1/2 lemon
    juice of 1 lemon
    1/8 tsp. pepper
Preparation
    Cook cabbage and onion in 1-inch boiling water in large saucepan for 6 minutes or until just tender.
    Drain and add remaining ingredients.
    Cover and cook over low heat 10 minutes or until vegetables are tender and mixture thickens slightly.
    Stir occasionally.
