Will'S Chili Verde - cooking recipe
Ingredients

1 1/2 c. canned or frozen Anaheim chilies (fresh chilies must be roasted and peeled, no seeds)
1 1/2 lb. pork, such a s butt steak or end cut chops
1 medium onion
1 tsp. cumin
pinch of red pepper seed
1 Tbsp. flour
1 Tbsp. cornstarch
3 Tbsp. vegetable oil
1 Tbsp. cold water
Preparation

Heat the oil on medium-high and sear pork on all sides and reduce to simmer.
Cook for approximately 1 hour, adding water as needed until tender.
Add chilies, onion and cumin and simmer an additional 30 minutes.
Mix cornstarch, flour and cold water together and add to chili.
Use red chili seed to add heat to taste and simmer to preferred texture.
