Golden Stuffed Baked Potatoes - cooking recipe
Ingredients

4 baked potatoes
1 c. grated raw carrots
1/4 c. chopped fresh parsley
1/4 c. minced onion or chives
1/2 tsp. horseradish
2/3 c. plain yogurt or sour cream
1/4 c. melted butter or margarine
salt and pepper to taste
grated Parmesan or Cheddar cheese
paprika
Preparation

Halve baked potatoes and scoop out pulp.
Whip pulp with carrots, parsley, chives, horseradish, yogurt and butter.
Season to taste with salt and pepper.
Refill potato halves.
Top with grated cheese and paprika.
Bake in a 350\u00b0 oven for 15 minutes, or until cheese melts and mixture is hot.
