Ricotta Puffs - cooking recipe

Ingredients
    1 c. flour
    1 tsp. baking powder
    2 Tbsp. sugar
    1 Tbsp. vanilla
    2 eggs
    1 lb. tub low-fat Ricotta cheese
    2 1/2 c. vegetable oil
    powdered sugar
Preparation
    Heat vegetable oil in a deep saucepan.
    Mix ingredients all together except for powdered sugar.
    Add a rounded tablespoonful of batter at a time to hot oil.
    Balls will form puffs and turn golden brown.
    Drain on a paper towel and sprinkle with powdered sugar.
    Serve warm with a dessert dish of jelly for dipping.
    Makes about 2 dozen puffs.
