Roasted Quail - cooking recipe

Ingredients
    2 quail per person
    salt and pepper
    butter or margarine
    chicken broth
Preparation
    Wipe birds with damp cloth.
    Rub generously with butter, salt and pepper, inside and out.
    Brown in very hot oven, 450\u00b0 to 500\u00b0 for 5 minutes.
    Reduce heat to 350\u00b0; add a little chicken broth and steam 20 to 25 minutes.
    The steaming keeps birds moist and helps hold flavor.
