Quick Cabbage Saute - cooking recipe

Ingredients
    2 Tbsp. pine nuts
    3 Tbsp. peanut oil or safflower
    1 leek (white only), finely chopped
    2 carrots, peeled and julienned
    1/2 sweet pepper, seeded and julienned
    1 medium cabbage, cored and finely shredded
    1 tsp. chili paste with garlic
    2 Tbsp. soy sauce
    1/4 c. dry sherry (optional)
    salt and freshly ground pepper
Preparation
    In large skillet, toast pine nuts over medium heat for 3 to 5 minutes.
    Shake pan constantly to avoid burning; remove and set aside.
    In same skillet, heat oil over medium heat.
    Saute leek until slightly softened, about 2 minutes.
    Add carrots and red peppers; saute about 3 more minutes.
    Add cabbage; saute until just wilted (approximately 3 minutes).
    Add chili paste, soy sauce, sherry, salt and pepper to taste.
    Stir to combine.
    Bring to boil for 1 minute.
    Add pine nuts.
    Serve immediately.
    Serves 4 to 6.
