Portuguese Soup - cooking recipe

Ingredients
    1 1/2 lb. Polish sausage, sliced
    5 c. water, divided
    2 carrots, sliced
    1/2 head cabbage, coarsely chopped
    1 medium onion, chopped
    2 medium potatoes, diced
    1/2 green pepper, chopped
    1 garlic clove, finely chopped (optional)
    1 (8 oz.) can tomato juice or vegetable juice
    2 cans kidney beans, drained and washed
Preparation
    Simmer sausage in 2 cups boiling water for 30 to 45 minutes. Add remaining ingredients, except kidney beans, and simmer for 1 to 1 1/2 hours.
    Add kidney beans last and heat through.
    Yield: 10 servings.
