Old Country Chicken Soup - cooking recipe

Ingredients
    3 lb. chicken, cut up or 3 lb. chicken parts
    3 qt. water
    1 large onion
    2 c. celery (include tops)
    6 carrots
    3 cloves garlic
    salt and pepper to taste
    parsley (fresh or dried)
Preparation
    In large pot, cover chicken with water.
    Bring to boil.
    Skim off \"foam\" or pour off and replace water.
    Add remaining ingredients and bring to boil.
    Simmer until meat is tender. Remove meat to plate.
    Cool enough to handle.
    Remove meat from bones.
    Return meat to broth.
    When ready to serve, add cooked rice, noodles or small pasta shapes (alphabets, orzo, etc.).
