Calvin'S Chicken Enchiladas - cooking recipe
Ingredients

2 large chicken breasts
2 tsp. vegetable oil
1 large onion, chopped
1 large green pepper, cleaned out and chopped
1/2 tsp. oregano
1/2 tsp. basil
10 oz. Monterey Jack cheese, grated
8 (7-inch) corn tortillas
2 Tbsp. vegetable oil
sour cream
Preparation

Simmer chicken breasts in 3 cups water until tender, about 20 to 30 minutes.
While chicken cooks, heat oil in frying pan. Saute onion, green pepper, oregano and basil until onion and green pepper are soft.
Drain chicken.
Remove bones (if not using boneless) and slice each breast into 6 strips.
