Mexican Meatloaf - cooking recipe

Ingredients
    1 1/2 lb. ground chuck or low fat ground beef
    1 egg
    1 - 10 oz. can tomatoes and green chilies
    1 small onion, chopped
    1 1/2 c. bread crumbs
    Salt and Pepper
    3/4 c. cheddar cheese
Preparation
    Mix all ingredients together and put into loaf pan.
    Bake at 375\u00b0 for 1 hour.
    Top with grated cheese.
    Return to oven just long enough to melt cheese.
