Chilled Melon Soup With Berries And Pine Nuts - cooking recipe

Ingredients
    1 c. sugar
    3 c. water
    1 vanilla bean, cut in half
    peel of 1 orange
    peel of 1 lemon
    2 medium-size cantaloupes (about 4 lb.)
    champagne or sparkling wine (optional)
    1/2 c. roasted pine nuts
    1/2 c. seasonal berries or frozen berries, thawed
Preparation
    Place sugar, water, vanilla bean, orange and lemon peels in a two-quart saucepan and bring to a boil.
    Cook and stir over medium-high heat for five minutes, or until a syrup consistency is obtained.
    Remove from the heat; pour into a bowl and refrigerate for at least 10 minutes.
