Ingredients

4 large onions
1 to 2 garlic cloves, crushed
3 Tbsp. margarine
1 Tbsp. olive oil
1 heaping Tbsp. flour
5 c. beef stock
1 c. white wine
salt and pepper
4 slices French bread
4 slices Gruyere cheese
Preparation

Heat margarine and oil in large pan.
Add onions and garlic and fry very gently for 10 to 15 minutes, stirring occasionally.
Stir in the flour and cook another 1 to 2 minutes, stirring constantly. Stir in the stock gradually, then add wine.
Season to taste with salt and pepper.
Bring to a boil, then lower the heat and cover. Simmer gently for 20 to 25 minutes or until the onions are soft.
