Hopping John - cooking recipe

Ingredients
    2 c. (1 lb.) dried black-eyed peas
    1 large onion, chopped
    2 lb. hot sausage or mix 1 mild and 1 hot
    1 c. rice
Preparation
    Cook peas according to directions.
    Cook sausage and onions in skillet and add black-eyed peas and uncooked rice onto mixture. Continue to cook for 1 to 1 1/2 hours.
    Serve with cornbread. Really good!
    Minute rice can be used.
    As water as needed and also seasoning.
