Mirza Gasemi(Eggplant, Tomato And Garlic) - cooking recipe

Ingredients
    4 medium eggplants
    3 to 4 Tbsp. vegetable oil
    2 large onions, chopped
    3 to 4 cloves garlic, minced
    1/2 Tbsp. turmeric
    3 to 4 large tomatoes, peeled and chopped
    3 eggs, slightly beaten
    salt and pepper to taste
Preparation
    Roast whole eggplants over charcoal, or bake in a 400\u00b0 oven until tender, about 15 to 20 minutes.
    Allow eggplants to cool, then peel and chop fine.
    Saute onions and garlic until soft. Stir in turmeric and eggplants; saute for a few more minutes.
    Add tomatoes; cook for 5 minutes, until all water is absorbed.
    Stir seasoning and eggs into eggplant mixture; continue cooking for several minutes until eggs are cooked.
