Texas Beef Skillet - cooking recipe
Ingredients

1 lb. ground beef
3/4 c. chopped onion
1 (16 oz.) can tomatoes, cut up
1 (15 1/2 oz.) can kidney beans
1/2 c. quick cooking rice
3 Tbsp. chopped green pepper
1 1/2 tsp. chili powder
1/2 tsp. garlic salt
3/4 c. grated cheese
corn chips, crushed
Preparation

In skillet, cook beef and onion.
Drain fat.
Stir in undrained tomatoes, undrained beans, uncooked rice, green pepper, chili powder, garlic salt, 1/2 cup water and 1/2 teaspoon salt.
Bring to boiling; reduce heat.
Simmer, covered, for 20 minutes, stirring occasionally.
Top with cheese.
Cover and heat 3 minutes or until cheese melts.
Sprinkle with corn chips around the edge.
Sour cream is good with this.
Serves 6.
