Sweet Potato Cake - cooking recipe
Ingredients

4 Tbsp. hot water
1 1/2 c. cooking oil
2 c. sugar
4 eggs, separated
2 1/2 c. sifted plain flour
3 tsp. baking powder
1/4 tsp. salt
1/2 c. nuts
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. vanilla flavoring
1 1/2 c. grated raw sweet potatoes
Preparation

Combine cooking oil and sugar and beat well.
Add hot water. Add dry ingredients which have been sifted together.
Stir in potatoes, nuts and vanilla and beat well.
Beat egg whites until stiff and fold into mixture.
Bake in 3 greased 8-inch layer pans at 350\u00b0 for 25 to 30 minutes.
Use light icing if you want, but it is good as is.
