Chicken Enchiladas(Serves 4) - cooking recipe
Ingredients

1 onion, chopped
1 Tbsp. butter
1 (8 oz.) pkg. cream cheese
1 (4 1/2 oz.) can green chilies
3 1/2 c. chicken, cooked and cubed
8 (8-inch) flour tortillas
1 (16 oz.) bag Monterey Jack cheese, shredded
2 c. whipping cream
Preparation

Saut onion in butter; add chilies, cream cheese and chicken. Stir over low heat until well mixed. Spoon 3 tablespoons mixture onto each tortilla; roll tightly and place seam side down in a 9 x 13-inch baking dish that has been sprayed with Pam. Sprinkle cheese on top and then drizzle with the 2 cups of cream. Bake in a 350\u00b0 oven for 30 minutes. Serve with taco sauce.
