3 c. unbleached flour
2 1/2 tsp. baking powder
2 1/2 tsp. ground cinnamon
3/4 tsp. ground nutmeg
1/2 tsp. salt (optional)
2 c. granulated sugar
1 1/2 c. vegetable oil
3 large eggs, room temperature
2 tsp. vanilla extract
3 c. shredded carrots
1 (18 oz.) can crushed pineapple
Orange Spice Frosting
dried cranberries, candied peel, etc. (optional garnish)
