Florida Key Lime Pie - cooking recipe

Ingredients
    1 prepared cooked pie shell
    1 egg yolk
    1 mini pinch of salt
    1/2 c. Key lime juice
    1 can sweetened condensed milk
Preparation
    Beat egg yolk and salt until light in color.
    Add sweetened condensed milk, stirring well.
    Add Key lime juice and blend thoroughly.
    (Note:
    The lemon juice cooks the egg.)
    Pour into prepared pie shell.
    Top with whipped cream.
    A variation on topping is either yogurt or sour cream to which a small amount of both sugar and vanilla are added and blended together.
