Iroquois Indian Cornbread - cooking recipe
Ingredients

1/4 c. soft butter or oleo
1/2 c. sugar
2 eggs
1 1/2 c. unsifted flour
3 tsp. baking powder
1 tsp. salt
1 c. canned pumpkin
1/2 c. milk
1 c. yellow cornmeal
1 c. blueberries
1/2 c. coarsely chopped nuts
Preparation

Cream butter and sugar, add eggs one at a time, beating. Add sifted dry ingredients alternately with pumpkin. Do not overbeat, just blend quickly. Add milk and cornmeal then fold in blueberries and nuts. Bake in loaf pan in 350 degree oven, about 45 minutes.
