Munchie Peanut Brittle - cooking recipe
Ingredients

1 c. raw peanuts *
1 c. granulated sugar
1/2 c. white corn syrup
1/8 tsp. salt
1 tsp. butter or margarine
1 tsp. vanilla extract
1 tsp. baking soda
Preparation

In 1 1/2-quart casserole dish, stir together the peanuts, sugar, syrup and salt.
Place in microwave oven and cook 8 minutes, stirring well after 4 minutes.
Add butter and vanilla to the syrup mixture, blending well.
Return dish to oven.
Cook 1 to 2 minutes more.
Peanuts will be lightly browned and syrup will be very hot.
Add baking soda and gently stir until light and foamy. Pour mixture onto lightly oiled cookie sheet.
Use an airtight container to store the candy.
Yield:
Approximately 1 pound.
