Pineapple Cheese Dessert(Diabetic) - cooking recipe

11 (2-inch) square graham crackers
1 Tbsp. melted margarine
2 envelopes dietetic lemon gelatin
1 1/2 c. cottage cheese
2 Tbsp. lemon juice
grated rind of 1/2 lemon
1/4 tsp. salt
2 (8 1/2 oz.) cans dietetic pineapple tidbits
artificial sweetener to equal 1/2 c. sugar
Preparation

Crush graham crackers into fine crumbs, reserving 3 tablespoons for topping.
Combine crumbs and margarine; press evenly in an 11 x 7 x 1 1/2-inch pan or 9-inch square pan.
Bake at 350\u00b0 for 10 minutes.
Remove from oven and cool.
Dissolve gelatin in 1 cup boiling water.
Combine cottage cheese, lemon juice, lemon rind, salt, pineapple and artificial sweetener in blender container; process until smooth.
Add to gelatin; blend well.
Chill until mixture is partially set.
Pour into crust; chill until firm.
Sprinkle with reserved crumbs.
Garnish with thin peels of lemon.
Yields 8 servings.
