Ingredients

1 cup sugar
1 cup all-purpose flour
1/4 tsp. baking soda
1/8 tsp. salt
1 can (11 oz.) Mandarin oranges, drained
1 egg
1/2 cup packed brown sugar
1 Tbsp. butter or margarine
2 Tbsp. milk
2/3 cup flaked coconut
Preparation

In a mixing bowl, combine the sugar, flour, baking soda and salt.
Add mandarin oranges and egg;
beat on medium speed for 2 minutes.
Pour into a greased 8 inch square baking pan.
Bake at 350 degrees for 30 - 40 minutes or until a toothpick inserted near the center comes out clean.
Cool on a wire rack for 15 minutes.
