Smothered Pork Chops - cooking recipe

Ingredients
    6 center cut pork chops (1-inch thick)
    1 tsp. salt
    1/4 tsp. white pepper
    1/4 c. pancake mix
    2 Tbsp. olive oil or vegetable shortening
    3 medium onions, peeled and sliced
    1 can cream of mushroom soup
    1/2 c. water
    leftover rice (optional)
Preparation
    Sprinkle pork chops with salt and pepper.
    Coat with pancake mix (flour will work if you don't have mix in the cabinet).
    Heat oil in large skillet.
    Brown chops on both sides.
    Remove chops and place in a shallow roasting pan.
    Saute onions in remaining oil.
    Mix condensed soup with water and pour in skillet.
    When hot, pour over chops.
    Spoon rice between chops and cover with soup mixture.
    Cover pan tightly with aluminum foil and bake in a moderate oven at 350\u00b0 for 1 hour and 20 minutes.
