Creamy Endive Soup - cooking recipe
Ingredients

2 qt. chicken stock
2 c. endive, washed and chopped
1/3 c. onion, chopped
4 medium potatoes, peeled and diced
1 tsp. garlic, chopped
1 c. heavy cream
olive oil
Preparation

Bring chicken stock to a boil and reduce heat.
Add endive, onion, potatoes and garlic and simmer until potatoes are cooked. Add olive oil.
Pass soup through a food processor and return it to the stove.
Bring soup to a boil and finish with heavy cream.
When ready to serve, drizzle the top of each bowl with a small amount of good olive oil.
