Carrot Cake Muffins - cooking recipe
Ingredients

1 c. grated carrots
1/2 tsp. cinnamon
1 1/4 c. whole wheat flour
1 tsp. baking soda
1 egg
2 tsp. baking powder
1/2 c. honey
1/4 c. lemon juice
1/2 c. melted butter or margarine
Preparation

In a large bowl, combine all the ingredients and mix well. Pour into greased muffin tins. Bake at 350 degrees for 20 minutes. Yield: 12 muffins.
