Sweet And Sour Carrots - cooking recipe

Ingredients
    1 lb. carrots, diagonally sliced
    1 large green pepper, seeded and cut in 1-inch squares
    1 (15 1/2 oz.) can pineapple chunks
    1/3 c. sugar (taste for sweetness)
    1 Tbsp. cornstarch
    2 tsp. vinegar
    2 tsp. soy sauce (can use low-sodium type)
Preparation
    Cook carrots, covered, in small amount of water until just tender, about 15 minutes.
    Add green pepper; cover and cook 3 more minutes.
    Drain.
