Fried Eggplant - cooking recipe

Ingredients
    1 eggplant (light purple, oblong shaped)
    1 beaten egg
    2 Tbsp. milk
    1 c. self-rising flour
    1/4 c. salt
    ice water or cubes
Preparation
    Select a light colored, oblong-shaped eggplant.
    They are not bitter.
    Peel, remove seeds and cut into strips.
    Soak in salted ice water for 1 hour; drain.
