Veggie-Tofu Scramble - cooking recipe
Ingredients

2 Tbsp. vegetable oil
1 onion, diced
1/2 c. red pepper, diced
1 carrot, grated
1 stalk celery, diced
1 lb. soft tofu
1/4 to 1/2 tsp. salt
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/4 c. parsley or scallions, chopped
Preparation

Saute vegetables in oil for 3 to 5 minutes.
Set aside. Combine tofu with spices.
Add to vegetables.
Cover and simmer for 5 minutes, stirring often.
Garnish with parsley or scallions, and serve.
