Calamari Rings - cooking recipe

Ingredients
    3 lb. squid, cleaned and cut into rings
    1 1/2 c. flour
    1/4 c. grated Parmesan
    1/4 c. Italian bread crumbs
    1/4 tsp. each: salt and pepper
    peanut oil for frying
Preparation
    Dry squid on paper towels.
    Combine dry ingredients and coat squid with flour mixture.
    Heat peanut oil to 365\u00b0.
    Deep fry a few rings at a time until golden brown, about 3 minutes.
    Do not overcook.
    Drain on paper towels.
    Serve hot with horseradish, sweet and sour or marinara sauce.
    Makes 4 servings.
