Elegant Stuffed Chicken - cooking recipe

Ingredients
    3 Tbsp. margarine
    2 medium zucchini, shredded
    3 slices white bread
    1 egg
    1/2 c. shredded Swiss cheese
    1/8 tsp. pepper
    salt to taste
    1 (2 1/2 to 3 lb.) fryer, cut into quarters
Preparation
    In 2-quart saucepan, over medium heat, melt butter.
    Add zucchini and cook until tender, about 2 minutes, stirring frequently. Remove from heat.
    Into pan, tear bread into small pieces. Stir in egg, cheese, pepper and 1/2 teaspoon salt. Carefully loosen skin on each chicken quarter by pushing fingers between skin and meat to form pocket.
    Spoon some stuffing into each pocket.
    Place chicken in a 9 x 13-inch baking dish.
    Bake at 400\u00b0 for 50 minutes or until fork-tender.
