Zesty Lemon Curd - cooking recipe
Ingredients

3 eggs, beaten
2 c. sugar
1/2 lb. butter, cut in 1 Tbsp. size pieces
3/4 c. fresh lemon juice
grated peel of 1 lemon
Preparation

In top of a double boiler, combine all ingredients; cook and stir over boiling water until thick like pudding.
Chill until ready to serve.
Spread on muffins, rolls, waffles or ice cream. Keeps well in refrigerator up to 2 weeks.
Yields 2 cups.
