Shrimp Creole - cooking recipe

Ingredients
    2 lb. medium shrimp in shells
    2 Tbsp. butter
    1/2 large onion, diced
    2 cloves garlic, diced
    3 to 4 scallions, cut crosswise
    2 1/2 c. water
    2 Tbsp. flour
    1 green pepper, diced
    1/2 c. tomato paste
    salt and pepper to taste
    1/2 c. parsley, chopped fine
Preparation
    Shell and drain shrimp. Place shells in water to make stock. Put shrimp aside. In a large skillet, brown butter. Add flour and stir to make paste. Brown onions, green pepper and garlic in skillet with paste. Drain stock from shells and add 2 cups of stock to skillet along with tomato paste. Cook for 1 hour or until thick. Add shrimp, parsley, scallions, salt and pepper. Cook until shrimp are pink. Serve over rice.
