Diabetic Cupcakes - cooking recipe

Ingredients
    1 c. water
    1 c. raisins
    2 eggs
    sweetener equal to 1 c. sugar
    3/4 c. oil
    1 c. applesauce
    1 tsp. soda
    2 c. flour
    1 1/2 tsp. cinnamon
    1 tsp. vanilla
    1/2 tsp. salt
Preparation
    Cook raisins in water until soft.
    Drain off water.
    Mix applesauce, eggs, sweetener and oil.
    Add soda and flour.
    Add remaining ingredients and stir in raisins.
    Bake at 350\u00b0 until toothpick comes out clean.
    Makes 2 dozen cakes.
    One cake equals 1 fruit and 1 fat exchange.
