Rhubarb Muffins - cooking recipe

Ingredients
    1 1/2 c. diced rhubarb
    2 1/2 c. flour
    1 tsp. baking soda
    1 egg
    1 c. buttermilk
    2 tsp. vanilla
    1 1/4 c. brown sugar
    1/2 tsp. salt
    1/4 c. chopped nuts
    1/2 c. oil
Preparation
    Mix together flour, soda, baking powder, salt, brown sugar, nuts and diced rhubarb.
    Beat egg; add buttermilk, oil and vanilla.
    Pour over flour mixture; mix well.
    Grease muffin tins. Fill 3/4 full.
    Bake at 400\u00b0 for 15 minutes or until done.
    Makes 1 dozen muffins.
