Chicken Breasts Parmesan - cooking recipe

Ingredients
    6 chicken breasts, deboned and skinned
    1/4 c. olive oil
    1 c. seasoned bread crumbs
    1/2 c. Parmesan cheese
    2 Tbsp. parsley
    2 eggs, lightly beaten
    3 c. marinara sauce
    1/2 lb. Muenster cheese, sliced
Preparation
    Heat olive oil in heavy skillet. Dredge chicken breasts in a mixture of bread crumbs, all but 3 tablespoons Parmesan cheese and parsley. Coat with beaten egg and redredge in crumbs. Cook over medium heat until golden brown on both sides. Cover with tight-fitting lid and simmer on low heat for 15 to 20 minutes. Drain on paper toweling.
