Eggplant Parmigiano - cooking recipe
Ingredients

2 nice-sized eggplant
spaghetti sauce
16 oz. Mozzarella cheese
Italian seasoned breadcrumbs
Preparation

Slice eggplant, dip in egg, then in breadcrumbs; fry in oil. Drain well on paper towels.
In a 13 x 9-inch casserole dish, layer ingredients: eggplant, cheese and sauce.
Heat in oven at 425\u00b0 until bubbly or cheese melts.
