Wild Leek Soup - cooking recipe

Ingredients
    4 cans chicken broth
    6 leeks, split and cut into 1-inch pieces
    1 1/2 tsp. salt
    1/8 tsp. pepper
    1 c. Minute rice
    1 c. cooked chicken, cut in thin strips
    2 Tbsp. minced parsley
Preparation
    Combine broth, leeks, salt and pepper in large saucepan. Bring to a boil.
    Reduce heat and simmer 15 minutes or until leeks are tender.
    Add chicken and rice.
    Cover and remove from heat. Let stand 5 minutes.
    Sprinkle with parsley.
    Makes 8 servings.
