Avocado Gazpacho - cooking recipe

Ingredients
    1 t. tomato juice
    1/2 c. canned tomato puree
    3 medium avocados, peeled and chopped
    1 medium cucumber, peeled and chopped
    1 large green pepper, seeded and chopped
    2 large tomatoes, chopped
    4 to 5 green onions, chopped
    2 Tbsp. minced fresh parsley
    1 clove garlic, minced
    2 Tbsp. fresh lemon or lime juice
    1/2 tsp. hot pepper sauce
    1/2 tsp. salt
    1/8 tsp. white pepper
    1 c. croutons (for garnish)
Preparation
    In a large bowl, combine all ingredients, except croutons. Chill thoroughly for 2 to 3 hours.
    Serve in chilled bowls. Garnish with croutons.
    Serves 8.
