Watermelon Rind Pickles - cooking recipe
Ingredients

7 lb. watermelon rind
7 c. sugar
2 c. vinegar
1/4 tsp. oil of cloves
1/4 tsp. cinnamon
Preparation

Trim off dark green and pink parts of watermelon rind.
Cut 1-inch or any shape desired.
Soak in lime water (1 tablespoon slacked lime to each quart of water) for 4 hours.
Drain and rinse. Cover with cold water and cook until tender but not soft. Drain. Combine sugar, vinegar, cinnamon and cloves.
Bring to boiling point.
Pour over rind and let stand overnight.
