Stir-Fry Cashew Chicken - cooking recipe

Ingredients
    3 skinned boneless chicken breast halves
    1/3 c. oil
    1 lb. fresh green beans, cut in 1-inch pieces
    1 yam, sliced 1/4-inch thick pieces
    1 can sliced water chestnuts, drained
    1 1/2 c. stir-fry mix
    1 (3 oz.) pkg. cashew pieces
    1 to 2 Tbsp. water
    3 c. cooked rice
Preparation
    Cut chicken into strips.
    Heat oil in skillet 2 to 3 minutes. Brown chicken and drain on paper towels.
    Add 2 to 3 tablespoons oil to skillet.
    Add green beans and yams.
    Cook for 2 minutes. Then add chicken, water chestnuts and stir-fry mix.
    Cook until thick (about 10 minutes).
    Stir in water and cashews.
    Cook another 2 minutes.
    Serve over rice.
